Thai Green Prawn Skewers

Ingredients:

  • 1 jar Thai green curry paste
  • 16 prawns
  • 2 limes
  • 1 bunch spring onion
  • 2 little gem lettuce (or another suitable leaf for making wraps with) 
  • 150g peanuts
  • coriander

Method:

Set up the grill for direct high heat (300c)

Marinade the prawns in curry paste & load onto skewers

For the peanut salad mix peanuts, zest & juice of limes, thinly sliced spring onions & chopped coriander

Grill the skewers over direct heat, roughly 3-4 minutes each side until cooked through.

Arrange the lettuce leaves on a plate and fill with the grilled prawns, top with peanut salad garnish with some spring onion & coriander.
