Sticky toffee apple pudding Cake
You will need:
- 2 cake tins
- 2 parchment rounds cut to size of the tins
Ingredients for the Cake
- 200g dates soaked in warm water
- 2 eggs
- 50ml treacle
- 175g butter or margarine (plus extra for greasing cake tins)
- 1tsp bicarbonate soda
- 150g brown sugar
- 150g plain flour
- 1 tsp nutmeg
Ingredients for the Toffee apples
- 8 to 10 small apples ideally granny smiths but any small apple will do
- 85g butter to grease the tin
- 100g brown sugar
- 300ml cream
Method
Set up your grill for indirect cooking at 180c, make sure you can fit both of your cake tins on the grill.
Blend the dates, eggs, treacle and butter into paste. Add in remaining dry ingredients for the cake, and mix well. place. mixture in greased cake tin lined with parchment
For the apple, grease the tin with 85g butter. Arrange the apples in tine and sprinkle the sugar and pour cream over the top of the apples.
Put both cake tins on the grill for about 30mins or until the cake is cooked through.
Once removed from the BBQ use a spoon to arrange apples on top of the cake and gently pour the hot toffee apple sauce over the top. Serve with a scoop of clotted cream, Enjoy!
